White Chocolate Mousse

Combine chocolate and cream in a medium heatproof bowl over a pan of simmering water until just melted
- 180 g white chocolate, chopped finely
- 300 ml thickened cream
- 1 t gelatine powder
- 1 T water
- 3 eggs separated
Lamingtons

Preheat oven to 190C. Grease and line the base and sides of a 20cm square cake pan with baking paper
- 4 eggs
- 125 g caster sugar
- 125 g plain flour
- 1 tsp vanilla bean paste
- 50 g unsalted butter, melted
- 200 g shredded coconut
- Chocolate icing
- 25 g unsalted butter
- 160 ml (2/3 cup) milk
- 500 g icing sugar
- 50 g (1/2 cup) Dutch cocoa (see note)
North Carolina Pulled Pork Sandwiches

Rub on pork, fridge overnight
- For the rub (optional)
- 1 tablespoon mild paprika
- 2 teaspoons light brown sugar
- 1 1/2 teaspoons hot paprika
- 1/2 teaspoon celery salt
- 1/2 teaspoon garlic salt
- 1/2 teaspoon dry mustard
- 1/2 teaspoon freshly ground black pepper
- 1/2 teaspoon onion powder
- 1/4 teaspoon salt
- Mop
- 1 cup apple cider vinegar
- 1/2 cup water
- 2 tablespoons Worcestershire sauce
- 1 tablespoon coarsely ground black pepper
- 1 tablespoon coarse salt
- 2 teaspoons vegetable oil
- Toss with vinegar sauce once cooked
Browned Butter Apple Cake Tart

Preheat the oven to 350F/175C
- 3 large tart apples, such as Granny Smith, peeled, cored and thinly sliced
- 1 teaspoon fresh lemon juice
- 3/4 cup (150g) plus 3 tablespoons sugar
- 3/4 cup (1 1/2 sticks/180g) unsalted butter
- 1/2 vanilla bean, split in half lengthwise (i.e. cut a bean in half crosswise, then split the half lengthwise)
- 2 large eggs, lightly beaten
- 1 cup (140g) all-purpose flour, sifted
- 1/4 teaspoon salt
- Vanilla-flavored whipped cream or ice cream, for serving
Peanut Energy Bars

Mix together the first six ingredients in a medium bowl
- 1/2 cup (60 g) salted dry-roasted peanuts
- 1/2 cup (60 g) roasted sunflower seed kernels, or use more peanuts or other nuts
- 1/2 cup (80 g) raisins or other dried fruit
- 2 cups (160 g) uncooked oatmeal, old-fashioned or instant
- 2 cups (50 g) toasted rice cereal, such as Rice Krispies
- 1/2 cup (130 g) peanut butter, crunchy or creamy
- 1/2 cup (100 g) packed brown sugar
- 1/2 cup (120 ml) light corn syrup
- 1 teaspoon vanilla
- Optional: 1/4 cup toasted wheat germ
Orecchiette with broccoli, chilli and pecorino

Combine oil, onion, garlic, and chilli in a large suacepan, saute over medium high heat until tender
- 50 ml EVOO
- 1/2 onion, diced
- 1 garlic clove, finely chopped
- 1 t dried chilli flakes
- 3 anchovy fillets
- 400 g dried orecchiette
- 6 c hot vegetable or chicken stock
- 150 g broccoli trimmed and cut into florets
- 50 pecorino, finely grated, plus extra to serve
- Finely grated lemon rind of 1 lemon
Warm Sesame Spinach

Combine first 4 ingredients in a small bowl, stirring with a whisk
- 1 tablespoon sesame seeds, toasted
- 2 tablespoons low-sodium soy sauce
- 1 tablespoon rice vinegar
- 2 teaspoons sugar
- 2 teaspoons dark sesame oil
- 3 garlic cloves, minced
- 2 (10-ounce) packages fresh spinach (about 5 cups)
Spinach and Watermelon Salad

Combine first 7 ingredients in a bowl; stir well with a whisk
- 1 tablespoon honey
- 1 tablespoon balsamic vinegar
- 1 tablespoon water
- 1 1/2 teaspoons olive oil
- 1/2 teaspoon lemon juice
- 1/8 teaspoon dried tarragon
- Dash of salt
- 4 cups torn spinach
- 4 cups thinly sliced romaine lettuce
- 2 cups (1-inch) watermelon balls
- 1 cup sliced strawberries

- 2 teaspoons salt
- 2 1/2 teaspoons instant (fast-acting) yeast
- 2 1/2 cups (600ml) ice-cold water (you can substitute white wine, or even milk, for up to half of the water)
- 1/4 cup (60ml) olive oil
- For the herb oil:
- 1/4 cup (60ml) olive oil
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 1 tablespoon fresh rosemary leaves
- 1/4 teaspoon dried thyme
- 1 teaspoon granulated garlic powder
- 1/4 teaspoon freshly ground black pepper

1 Whisk yolks and sugar in a bowl to combine, then whisk in juices and rinds
- 8 egg yolks
- 290 gm caster sugar
- 90 ml each orange juice and lemon juice, plus finely grated rind of 1 orange and 1 lemon
- 160 gm butter, coarsely chopped
