LINGUINE w/WHITE CLAMS & BROCCOLI

Cook the broccoli in a large saucepan of salted water just until it is softened a little bit, about 2 minutes
- Salsa Alle Vongole Con Broccoli
- Serves 6
- 3 cups broccoli florets
- 36 littleneck clams, scrubbed and shucked, juice reserved
- 1 pound linguine
- 1/2 cup extra virgin olive oil
- 6 garlic cloves, peeled and sliced
- 1/2 teaspoon crushed red pepper
- 1/4 cup chopped fresh Italian parsley
WARM CHOCOLATE CAKES

FOR THE CAKE BATTER: Preheat oven to 425 degrees F
- For the Cake Batter:
- Warm Chocolate Cakes with Dulce de Leche
- 8 tablespoons (1 stick) unsalted butter, plus extra for the molds
- 1 tablespoon all-purpose flour, plus extra for molds
- 4 ounce bittersweet chocolate, chopped
- 2 large eggs
- 2 large egg yolks
- 1/4 cup sugar
- 2 large egg whites
- 6 tablespoons Dulce de Leche (recipe follows)
- Vanilla or pecan ice cream, for serving
- Hot fudge sauce, for serving (optional)
- For the Dulce de Leche: (makes about 1 cup)
- 2 cups whole milk
- 1 cup canned unsweetened coconut milk
- 2 1/2 tablespoons dark corn syrup
- 1/4 cup sugar
- 2 cinnamon sticks, preferably Mexican cinnamon (canela)
- 1 vanilla bean, split lengthwise and seeds scraped
- 1/4 teaspoon baking soda
LEMON CHEESECAKE SQUARES

Grilled-Pepper Salad with Currants, Capers and Feta

- 2 tablespoons pine nuts

- 1 tablespoon drained small capers
- 2 tablespoons sherry vinegar
- 1/4 cup chopped parsley
- 1/2 cup crumbled feta cheese
