TURKEY & MUSHROOM BREAD PUDDING

- 2 teaspoons unsalted butter
- 2 tablespoons chopped shallots
- 3 cups coarsely chopped white mushrooms
- 1 teaspoon chopped fresh rosemary
- 1 teaspoon chopped fresh sage
- 3/4 teaspoon chopped fresh thyme
- 2 1/2 teaspoons salt
- Freshly ground pepper to taste
- 2 cups cooked turkey, cut into 1/4-inch cubes

- 4 cups milk
- 8 cups bread cut into 1/2-inch cubes

- 2 tablespoons baking powder
- 1 tablespoon salt
- 3/4 cup milk

CREAMY CUCUMBER GAZPACHO

Seed cucumbers and put seeds in a blender
- 3 English cucumbers (2 lb total), peeled
- 1 1/2 yellow bell peppers, cut into 1/4-inch dice
- 1 1/2 fresh jalapeño chiles, seeded and minced
- 1 large garlic clove, minced
- 3 tablespoons fresh lime juice
- 3/4 cup chopped fresh cilantro
- 3/4 cup sour cream
- 1 teaspoon salt
- 1/4 teaspoon black pepper

- 3 tablespoons freshly squeezed lemon juice
- 1 tablespoon crushed red pepper

FIERY HARISSA

- The result here, used as a condiment for the couscous and a marinade for the lamb, is definitely more intense, and a little goes a long way.
