- 6 ounces rice vermicelli
- 2 red Thai chiles, thinly sliced
- 2 garlic cloves, thinly sliced
- 1/4 cup sugar
- 1/2 cup fresh lime juice
- 1/3 cup Asian fish sauce
- 2 tablespoons boiling water
- 1/2 pound medium shrimp, shelled and deveined
- 1/2 pound bay scallops
- 1/2 pound small squid, bodies cut into 1/2-inch rings and tentacles halved
- 3 plum tomatoes, seeded and diced
- 1 cup bean sprouts
- 1 cup mint leaves
- 1/2 small red onion, thinly sliced
- 1/2 cup salted roasted peanuts
- 6 lettuce leaves, for serving
- Cilantro leaves, for garnish

Korean Spicy Pork Meatballs

- 1 pound ground pork
- 5 scallions, finely chopped
- 1/4 cup gochujang (Korean chile paste)
- 1/4 cup mirin mirin
- 2 tablespoons soy sauce
- 4 medium garlic cloves, finely chopped
- 1-inch piece fresh ginger, peeled and grated
- 2 tablespoons canola oil
PASTA w/CARROTS & SAUSAGE

If using whole sausage remove meat from skins
- 8 oz. pork sausage
- 1 tbsp. oil
- 1/2 oz. butter
- 1/2 onion, chopped
- 3 carrots
- 14 oz. tomatoes
- 4 fluid oz. chicken stock
- 1 bay leaf
- 1 tsp. dried oregano
- 12 oz. pasta
- 3 oz. freshly grated Parmesan cheese
PAN COOKED SUMMER SQUASH w/TOMS & BASIL

1. Heat 1 tablespoon of the olive oil over medium-high heat in a wide, heavy skillet
- 2 tablespoons extra virgin olive oil
- 1 1/2 pounds medium or small zucchini or other summer squash, thinly sliced or diced (depending on what shape squash you use)
- 2 garlic cloves, minced
- 1 pound ripe tomatoes, grated on the large holes of a box grater, or peeled, seeded and diced
- Salt and freshly ground pepper
- 1 to 2 tablespoons chopped or slivered fresh basil (to taste)
MAHON CHEESE ICE CREAM

Bring milk just to a boil in a 1 1/2- to 2-quart heavy saucepan
- 3 cups whole milk
- 3 large eggs
- 1/2 cup sugar
- 4 ounces cream cheese, softened
- 4 ounces Spanish Mahon, Danish Fontina cheese, rind discarded and cheese coarsely grated (1 cup)
- 1/2 teaspoon vanilla
HAZELNUT & WILD MUSHROOM PATE

1. In a large sauté pan over low heat, melt 2 tablespoons butter
- 4 tablespoons unsalted butter
- 1 large shallot, thinly sliced
- 2 cloves garlic, minced
- 1½ teaspoons salt
- ¼ teaspoons freshly ground pepper
- 1 pound wild mushrooms, sliced
- ½ pound Crimini or button mushrooms, sliced
- 2 teaspoons Marsala wine Scant
- 1 cup roasted hazelnuts
- 4 tablespoons unsalted butter, melted
- ½ teaspoon apple-cider vinegar
- ½ teaspoon aged balsamic vinegar
- Pinch ground nutmeg
- Pinch ground cayenne.
BLUEBERRY RICOTTA PANCAKES

Tip: No buttermilk? Mix 1 tablespoon lemon juice into 1 cup milk
- YIELD 8 PANCAKES
- Sprinkling the berries on top of the cooking pancakes ensures even distribution. Keep finished pancakes warm in a 200°F oven, if desired, while cooking the rest.
- 1/2 cup whole-wheat pastry flour (see Source)
- 1/4 cup plus 2 tablespoons all-purpose flour
- 1 teaspoon sugar

- 1/4 teaspoon baking soda
