Herb Coeur A La Creme

Place the cream cheese in the bowl of an electric mixer fitted with the whisk attachment
- 12 ounces cream cheese, at room temperature
- 1 cup heavy cream
- 3 tablespoons minced scallions, white and green parts (2 scallions)
- 2 tablespoons minced fresh dill
- 1 tablespoon minced fresh chives
- Grated zest of 1 lemon
- 1 tablespoon freshly squeezed lemon juice
- 1 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
A rustic Tuscan-style Sausage Soup

1. Remove sausage from casings and brown over med-high heat in the bottom of your largest stockpot
- 2 lbs. sweet Italian sausage
- 3 carrots, peeled and chopped
- 1 sweet onion, chopped
- 4 cloves garlic, chopped
- 3 quarts chicken broth
- 2 14.5-ounce cans diced tomatoes, with juice
- 2 15-ounce cans cannellini beans, drained and rinsed
- 1 tablespoon dried basil
- 1-lb (16-oz) whole wheat shell pasta, uncooked
- 8 ounces spinach leaves
- salt and pepper to taste
- Grated Parmesan cheese for topping (if desired)
Wilted Romaine Salad with Roasted Pears, Taleggio and Hazelnuts

Preheat the oven to 350 degrees F
- 2 Bosc pears, peeled, halved and cored
- Extra-virgin olive oil
- 1/4 cup hazelnuts
- 1/2 pound ripe Taleggio cheese, outer rind removed
- 1 large head romaine lettuce, tough outer leaves and leathery tops removed, cut lengthwise into quarters with the stalk left intact
- Kosher salt
- 1/4 cup champagne vinegar
