Festive Pineapple-Cranberry Salad

Drain pineapple, reserving juice
- 1 can (20oz) Crushed Pineapple, undrained
- 2 pkg. (4 srvg size each) Raspberry Flavored Gelatin
- 1 can (16oz) whole berry cranberry sauce
- 1 Apple, chopped
- 2/3 cup chopped Pecans or Walnuts
Perfect "Fried" Chicken

1. Preheat oven to 400 degrees F
- Also Needed:
- 1 (5 1/4 oz.) pkg. Melba Toast
- 1 Large Egg
- 1 Egg white
- 1 Tbsp. Brown mustard
- 1 tsp. paprika
- 1/2 tsp. dried thyme
- 1/2 tsp. dried sage
- 1/2 tsp. salt
- 1/2 tsp. black pepper
- 1 (3 1/2 lb.) chicken, cut into 8 pieces and skinned
- Wax Paper
- Aluminum Foil
- Olive oil non-stick spray
Pot Roasted Chicken and Vegetables

Place all ingredients, except the cornstarch and garnish, in the Crock-Pot; stir to combine
- 3 lbs. Chicken-cut in parts-rinsed and pat dry
- 2 Tablespoons Unsalted Butter-softened
- 2 Tablespoons Olive Oil
- 2 Cups Chicken Broth-defatted
- 2 Cups Carrot-diced
- 1 medium Onion-halved and slivered
- 2 Tablespoons garlic-minced
- 1 Tablespoon FRESH Tarragon--OR 1 tsp. Dried Tarragon
- Salt and Pepper-to taste
- 2 Tablespoons Cornstarch
- 2 Tablespoons Parsley-to garnish
