SCUPPERNONG PIE

- 4 C. scuppernongs
- 1 C. sugar
- 1/4 C. all-purpose flour
- 1/8 tea. salt
- 1 T. lemon juice
- 1 ½ T. butter, melted
- 1 unbaked 9" pastry shell
- CrumbTopping
- ½ c. all-purpose flour
- 1/4 C. sugar
- 1/4 C. butter
- ●Combine flour and sugar and stir well. Cut in butter with a pastry blender until resembles course meal.
- ●Rinse scuppernongs; drain well. Remove skins from scuppernongs; separate and set both aside.
- ●Place pulp in a heavy saucepan and bring to a boil. Reduce heat and simmer, uncovered for 5 min.
- ●Press pulp through a sieve and remove seeds.
- ●Combine pulp, skins, sugar, flour, salt, lemon juice, and butter. Stir well.
- ●Pour into pastry shell and sprinkle crumb topping over pie.

- Directions:
- 100 grams ground London broil or round roast
- 1 Grissini breadstick (ground into powder)
- 1 TBSP of milk
- 1/2 tsp parsley
- 1/2 tsp basil
- 1/2 tsp oregano
- 1 clove minced garlic
- Salt and pepper to taste
- ●Preheat oven to 425.
- ●In bowl, combine all ingredients.
- ●Form into 1 in. meatballs (makes about 6-7). Place in a baking dish on non stick aluminum foil and cook for 10 minutes, turning 1/2 way through.
SAUSAGE CASSEROLE

- 1 pound sage flavored breakfast sausage
- 3 cups shredded potatoes, drained and pressed
- 1/4 cup butter, melted
- 12 ounces mild Cheddar cheese, shredded
- 1/2 cup onion, shredded
- 1 (16 ounce) container small curd cottage cheese
- 6 jumbo eggs
- Directions
- ● Preheat oven to 375 degrees F (190 degrees C). Lightly grease a 9x13 inch square baking dish.
- ● Place sausage in a large, deep skillet. Cook over medium-high heat until evenly brown. Drain, crumble, and set aside.
- ● In the prepared baking dish, stir together the shredded potatoes and butter.
- ● Line the bottom and sides of the baking dish with the mixture.
- ● In a bowl, mix the sausage, Cheddar cheese, onion, cottage cheese, and eggs. Pour over the potato mixture.
- ● Bake 1 hour in the preheated oven, or until a toothpick inserted into center of the casserole comes out clean.
- ● Let cool for 5 minutes before serving.
CREAMY POTATO LASAGNA

- Directions:
- 1 1 ounce) jar 1 (12 ounce) jar Alfredo sauce
- 1 1 1 cup milk
- 3 3 1/8 pounds potatoes, peeled and sliced lengthwise about 1/8 inch thick
- 5 5 5 tablespoons grated Parmesan cheese
- 1/2 1/2 1/2 teaspoon salt
- 1/2 1/2 1/2 teaspoon ground black pepper
- 1 1/2 1 1/2 1/2 cups diced ham
- 1 1 ounce) package 1 (10 ounce) package chopped frozen broccoli, thawed
- 2 2 2 cups shredded Swiss cheese
- to 400 to 400 degrees F.
- 9x13 grease a 9x13 inch baking dish.
- ●In a medium bowl, whisk together the Alfredo sauce and milk.
- 1/4 1/3 1 to the sauce in the bottom of the baking dish. Then layer 1/3 of the potatoes over the sauce in the dish. Sprinkle with 1 tablespoon of Parmesan cheese and salt and pepper to taste.
- 1 1/2 separate medium bowl, combine the ham, broccoli and 1 1/2 cups of the Swiss cheese. and mix well.
- 400 45 350 25 400 degrees F for 45 minutes, then uncover and bake at 350 degrees F for additional 25 minutes or until potatoes are tender.

SHREDDED OR GRATED PARMESEAN CHEESE

- When a recipe calls for shredded parmesean cheese, use the cheese found in bags in grocery store dairy section. If grated parmesean is called for, use the finely grated cheese in containers with shaker-pour tops.
DEEP DISH PIZZA PIE

- 1 pound ground beef
- 1 small onion, chopped
- 1 can (8 oz) pizza sauce
- 1 can (11 oz) Pillsbury refrigerated crusty french loaf
- 2 cups shredded Italian cheese blend (8 oz)
- 1 package (3 oz) pepperoni slices
- 1 egg
- 1 Tbsp water
- Pizza sauce, if desired
- 1 . Heat oven to 350 F. Spray 9 inch glass pie plate with cooking spray. In 10 inch skillet, cook ground beef and onion over medium high heat, stirring frequently, until beef is thoroughly cooked; drain. Stir in pizza sauce until well mixed.
- 2 . Carefully unroll dough in pie pan so edges extend over sides. Pat dough in bottom and up sides of pan, leaving dough extended over sides. Spoon ground beef mixture into crust. Top with half of the cheese, pepperoni and remaining cheese.
- 3 . In small bowl, slightly beat egg and water. Fold extended edges of dough up and over filling; seal all edges. Brush cover with egg mixture.
- 4 . Bake 38-48 minutes or until deep golden brown. Cool 15 minutes. Cut pizza into wedges.
CREAMY CORN

- 8 oz cream cheese, softened
- 1/4 c. milk
- 1/3 c. margarine, cubed
- 1/2 t. garlic powder
- 1/2 t. salt
- 1/4 t. pepper
- 2 large cans whole kernel corn, drained
- ●In a slow cooker, combine all ingredients and cover. Cook on low for 4 hours or until heated and cheese melted. Stir well before serving.
CREAM CHEESE COOKIES

- 1 cup butter
- 8 oz. cream cheese softened
- 2 cups sugar
- 2 cups all purpose flour
- 1 tsp. vnilla
- 2 tsps. grated lemon zest
- ●Heat oven to 350 F.
- ●Stir together the butter and cream cheese. Add sugar, then remaining ingredients.
- ●Drop by spoonfuls onto cookie sheets.
ICE CREAM

- 11 eggs (6)
- 1 can condensed milk (1)
- ½ gal. milk (1 qt.)
- 1 T. vanilla (2 tea.)
- 1 ½ C. sugar (3/4)
- ●Note: Numbers in ( ) are for ½ the recipe.
- ●Beat eggs and add 1 quart of milk. Heat at low heat until almost boiling. (Will see steam forming). Be sure to keep stirred to prevent scorching.
- ●Remove from heat.
- ●Add sugar and condensed milk.
- ●When cool, add vanilla.
- ●Mix well and freeze.
MILLIONAIRE CANDY

- Directions:
- 1 package caramel candy
- 1 can Eagle Brand milk
- 6 c. pecan halves
- 1 package semi-sweet chocolate
- 1/2 bar paraffin
- ●Melt caramel and milk in double boiler. Remove from heat and stir in pecans.
- ●Drop onto greased cookie sheet and place in freezer for 1 hour.
- ●At the end of 1 hour, melt paraffin and chocolate in double boiler.
- ●Remove caramel from freezer and dip into chocolate using a fork so that excess chocolate runs off.
