  • Directions:
  • 3 c. sugar
  • 1 c. chopped pecans
  • 1 t. salt
  • 3/4 c. vegetable oil
  • 2 c. sweet potatoes, cooked and mashed
  • 3/4 t. baking powder
  • 1 1/2 t. cinnamon
  • 1 1/2 t. baking soda
  • 4 or 5 eggs
  • 3 1/2 c. all-purpose flour
  • 1/2 to 1 t. nutmeg
  • 2/3 c. water
  • ●Mix all dry ingredients.
  • ●Add liquids and beat well to mix.
  • ●Bake in Bundt pan in preheated 350 F oven for approximately 1 hour and 30 minutes.

  • Directions:
  • 8 chicken drumsticks, skin on (the skin is important for flavour, and is so tasty to eat!)
  • 1 cup water
  • 1/2 cup balsamic vinegar
  • 1/3 cup soy sauce
  • 2 1/2 tablespoons sugar
  • 1 garlic clove, peeled and bruised
  • 1 small hot chili pepper, slit open, seeds removed
  • 1 . Place all the ingredients in a saucepan over a high heat.
  • 2 . Bring to the boil, then reduce to a simmer for about 20 minutes.
  • 3 . Remove any scum that rises to the surface.
  • 4 . Increase the heat, turning the drumsticks frequently in the sauce, and cook until the liquid has reduced to a sticky glaze.
  • 5 . Arrange the chicken on a serving platter, remove the garlic clove and chili from the liquid, and spoon the glaze over.

  • 1 1/2 lbs ground beef (ground shoulder roast is good)
  • 1 slice bread (broken or chopped finely) or 1/4 c. bread crumbs
  • 1 egg
  • 1 small vidalia onions or 1 small type sweet onion, finely chopped
  • 1 teaspoon table salt
  • 1/4 teaspoon black pepper
  • 4 tablespoons ketchup
  • 1/2-2/3 cup whole milk or 1/2-2/3 cup half-and-half
  • Sauce
  • 4 tablespoons apple cider vinegar
  • 2-4 tablespoons dark brown sugar, packed firm (to taste)
  • 1/2 cup ketchup
  • 1 . Meatloaf: Combine meat loaf ingredients and place into a loaf baking dish.
  • 2 . Smooth out top.
  • 3 . Sauce: Combine sauce ingredients and pour on top and sides of meatloaf.
  • 4 . Bake at 350 F about 1 hour to 1 hour 15 minutes or until done.

  • 1 1 1 cup unsalted butter, softened

  • Directions:
  • to 350 24 350 degrees F. Line 24 muffin cups with liners.
  • ●To make the chocolate cake, in a medium sized mixing bowl, sift together flour, cocoa powder, baking powder, baking soda and salt.

  • SOUP:
  • 3 3 3 quarts water

  • 3 3 3 cups cubed cooked turkey
  • 1/4 1/4 1/4 cup minced fresh parsley

  • Directions
  • 15-in. 10-in. 1-in. 400° 1 bones from wings and drumsticks, neck bone, onion, carrots and garlic in a 15-in. x 10-in. x 1-in. baking pan coated with cooking spray. Bake, uncovered, at 400° for 1 hour, turning once.

  • Mixture:
  • 1/3 cup white vinegar
  • 4 TB brown sugar
  • 1 TB ketchup
  • 1 tsp soy sauce
  • 2 teaspoons cornstarch mixed with 4 teaspoons water
  • Directions:
  • ● Mix the vinegar, brown sugar, ketchup, and soy sauce together and bring to a boil in a small pot.
  • ● Mix together the cornstarch and water, add to the other ingredients and stir to thicken.
  • ● For a thicker sauce increase the cornstarch to 4 teaspoons while keeping the water constant.)
  • (If desired, you can add 1 green pepper, cut into chunks, and pineapple chunks as desired after adding the cornstarch.)

  • 1 C. shortening
  • 1 egg
  • 1 C. molasses
  • 1 C. buttermilk
  • 4 tea. soda
  • 1 tea. salt
  • 2 T. vinegar
  • 1 tea. cinnamon
  • ½ tea. ginger
  • Flour (about 4 C.)
  • ●Cream sugar and shortening.
  • ●Add egg and beat vigorously.
  • ●Add molasses, salt, cinnamon, ginger and beat well.
  • ●Add milk, then the soda that has been dissolved in vinegar.
  • ●Add flour, using only enough to allow you to roll the dough well.
  • ●Cut into cookies and place on a greased cookie sheet.
  • ●Bake in moderate oven for about 12 min.

  • 4 large baking potatoes
  • 1/2 cup reduced calorie margarine
  • 1/2 cup flour
  • 6 cups skim milk
  • 1 teaspoon salt
  • 2 teaspoons pepper
  • 1 medium onion, chopped
  • 2 green onions, chopped
  • 4 slices cooked bacon, crumbled
  • 6 ounces light sour cream
  • ●Wash potatoes and bake at 400 degrees for about an hour, or until done. Cool.
  • ●Cut potatoes in 1/2 inch cubes. (It is not necessary to peel skins.)
  • ●Melt margarine in large pan over low heat and add flour, stirring until smooth. Cook one minute, stirring constantly.
  • ●Over medium heat gradually add milk and stir constantly until mixture thickens and bubbles.
  • ●Add potatoes, salt, pepper, onions and bacon. Cook until thoroughly heated and onions soft.
  • ●Soup will thicken more as potatoes soften. Add sour cream and stir before serving.

  • Directions:
  • 1 1 1 cup granulated sugar
  • 1 1 1 qt. heavy cream
  • 2 2 2 cups whole milk
  • 1 1 1 T. cinnamon spice
  • 4 4 4 whole eggs
  • 6-8 6-8 12-15 large or 12-15 small baked croissants, torn
  • 2 2 2 cups dried cranberries
  • 1/2 1/2 1/2 cup heavy cream
  • 2 2 2 cups white chocolate chips
  • 1 a large mixing bowl, combine sugar, 1 qt. heavy cream, milk, cinnamon and eggs with a whisk.
  • ●Add croissants and dried cranberries.
  • 2 bowl with wrap and place in refrigerator for at least 2 hours. (Bread pudding is best when sitting overnight.)
  • to 325 to 325 F; remove cover from bowl. Stir to ensure that all is combined and soaked well.
  • 45 to 1 205-208 pan and bake for 45 minutes to 1 hour. Mixture will be golden brown and read 205-208 F in the center.
  • ●Remove from oven and let cool completely. Refrigerate overnight.
  • 1 a knife, slice pudding into 1 inch slices; should resemble slices of Texas Toast.
  • 1 1 30 pan, place on medium high heat; using pan spray and place 1 slice of pudding into pan. Cook for 1 minute, if not golden brown continue cooking for additional 30 seconds. Flip slice over and brown other side.
  • ●Remove from pan and serve immediately with orange maple syrup.
  • Orange Maple Syrup:
  • 1 3/4 1 3/4 3/4 cups Maple syrup
  • 1 Zest and juice of 1 navel orange
  • Directions:
  • ●In a small pot, combine maple syrup, orange juice and zest. Heat mixture over medium heat until warm. Serve immediately. Can be stored in refrigerator.
