*SPICY PORK STIR-FRY

- Directions:
- 1-1/4 pounds pork tenderloin
- 2 tablespoons soy sauce
- 1 tablespoon cornstarch
- 1/4 teaspoon salt
- 1/4 teaspoon sugar
- 1/4 teaspoon ground ginger
- 1/4 teaspoon cayenne pepper
- 1 medium onion, thinly sliced
- 1 medium carrot, julienned
- 1 garlic clove, minced
- 2 tablespoons vegetable oil
- 1 package (6 ounces) frozen snow peas, thawed
- Boston lettuce leaves or hot cooked rice
- Toasted sesame seeds, optional
- ● Cut the pork into 1/8-in. wide slices; cut each slice into 3-in. strips.
- ● In a bowl, combine the soy sauce, cornstarch, salt, sugar, ginger and cayenne. Add pork; toss to coat and set aside.
- ● In a large skillet or wok, stir-fry onion, carrot and garlic in oil until crisp-tender. Remove with a slotted spoon and keep warm.
- ● In the same skillet, stir-fry pork over medium-high heat until browned and no longer pink. Add onion mixture and peas; heat through.
- ● Serve in lettuce cups or over rice.
- ● Sprinkle with sesame seeds if desired.
HIDDEN CHEESEBURGER

- Directions:
- 2 pounds ground beef
- 2 small dill pickles, minced
- 1 small onion, minced
- 2 tablespoons grated Parmesan cheese
- 1 tablespoon mayonnaise
- 1 tablespoon ketchup
- 1 teaspoon minced garlic
- salt and pepper to taste
- 2 tablespoons olive oil
- 2 tablespoons all-purpose flour
- 1 pound frozen bread dough, thawed
- 8 slices American cheese
- 1 tablespoon melted butter
- ●Combine the ground beef, pickles, onion, Parmesan cheese, mayonnaise, ketchup, garlic, salt, and pepper in a bowl. Form the mixture into 4 patties.
- ●Heat the olive oil in a skillet over medium heat. Cook the hamburger patties in the hot oil until the burgers are cooked to your desired degree of doneness, 8 to 10 minutes for well done.
- ●Line a baking sheet with parchment paper, and set aside.
- ●Cover a flat surface with the flour. Divide the bread dough into 4 even pieces; roll each piece into a flattened rectangle on the floured surface at least twice the size of the American cheese slices.
- ●Place one slice of American cheese on each piece of dough; top each with one of the cooked patties and another slice of American cheese. Fold the dough over the top of the meat and cheese. Pinch the dough around the edges to seal completely.
- ●Arrange on the prepared baking sheet with the seam side facing downward. Brush the tops with the melted butter; move to a warm area and allow to rise for 20 minutes.
- ●Preheat an oven to 425 degrees F.
- ●Bake in the preheated oven until the bread has browned, about 20 minutes.
KENTUCKY STYLE FRIED GREEN TOMATOES

- 1/2 cup bacon grease
- 1/3 cup all-purpose flour
- 3/4 cup cornmeal
- 1/4 teaspoon ground black pepper
- 1 egg
- 1/4 cup milk
- 1 green tomato, cut into 1/4 inch slices
- Directions
- ●Heat the bacon grease in a large skillet over medium heat. In one small bowl.
- ●Stir together the flour, cornmeal and pepper. In another small bowl, whisk together the egg and milk using a fork.
- ●Dip the tomato slices into the egg and milk, then coat with the dry mixture.
- ●Place the breaded tomato slices in the hot bacon grease. Cook until browned on each side, about 3 to 4 minutes per side. Bacon grease burns easily, so adjust your heat if you need to.

- 1 1/4 1 1/4 1/4 cups cake flour
- 3 3/4 3 3/4 3/4 cups bread flour
- 1 1/2 1 1/2 1/2 teaspoons salt
- 1/4 1/4 1/4 cup white sugar
- 1 1/4 1 1/4 1/4 cups cold butter, cut into tablespoon-sized pieces
- 1 1/4 1 1/4 1/4 cups cold water
- 1 1/2 1 1/2 1/2 teaspoons lemon juice
- ● In a large bowl, stir together the cake flour, bread flour, salt and white sugar. Stir in the chunks of butter so that each one is completely coated in flour.
- to Combine the cold water and lemon juice; stir into the bowl while lightly tossing the ingredients to moisten them evenly. Gather the dough into a ball.

- 1 can red kidney beans
- 2 (8 oz) cans tomato sauce or 1 (15 oz) can.
- 2 cans stewed tomatoes
- 1 can Rotel tomatoes
- 1 pkg. Taco seasoning mix
- 1 small onion
- 3 C. water
- ●Mix all ingredients and simmer for 20 to 30 min.

- FROSTING:
- 1-2/3 cups sugar
- 2 eggs
- 1/2 cup unsweetened applesauce
- 2 tablespoons canola oil
- 2 teaspoons vanilla extract
- 2 cups all-purpose flour
- 2 teaspoons baking soda
- 2 teaspoons ground cinnamon
- 3/4 teaspoon salt
- 6 cups chopped peeled tart apples
- 1/2 cup chopped pecans
- 4 ounces reduced-fat cream cheese
- 2 tablespoons butter, softened
- 1 teaspoon vanilla extract
- 1 cup confectioners' sugar
- Directions
- ●In a bowl, combine the sugar, eggs, applesauce, oil and vanilla. Beat for 2 minutes on medium speed.
- ●Combine the flour, baking soda, cinnamon and salt; add to applesauce mixture and beat until combined. Fold in apples and pecans.
- ●Transfer to a 13-in. x 9-in. baking dish coated with cooking spray.
- ●Bake at 350 degrees for 35-40 minutes or until top is golden brown and a toothpick inserted near the center comes out clean. Cool on a wire rack.
- For frosting, combine cream cheese, butter and vanilla in a small bowl until smooth. Gradually beat in confectioners' sugar (mixture will be soft).
- ●Spread over cooled cake.
REAL MAPLE BUTTER

- ● Fill your sink with at least 6 inches of very cold water before starting to cook the spread.
- ● In a large pot over medium-high heat, bring the maple syrup and corn syrup to a boil. Cook the syrup until a candy thermometer reads exactly 232 degrees F, stirring occasionally. The correct temperature is very crucial in the process.
- ● As soon as the syrup reaches the correct temperature, take the pan off the heat and carefully lower it into the cold water bath. Allow the syrup to rest and cool until it reaches 70 degrees F, about 30 minutes.
- ● When the syrup reaches 70 degrees F, remove the pot from the cold water bath and beat the cooled syrup with an electric mixer on high speed until the syrup forms a creamy, thick spread, about 3 minutes.
- ● Pack the spread into a container, cover, and ripen in refrigerator for about 2 hours before serving. Maple butter will keep covered in refrigerator up to a month.
- ● If chilled maple butter is too hard to spread straight from the refrigerator, allow to come to room temperature.
TWICE COOKED DIVINITY

- Directions:
- 2 c. sugar
- 1/2 c. Karo
- 1/2 c. water
- Dash salt
- 2 egg whites, beaten until stiff
- 1 t. vanilla
- 1 c. pecans
- Stir together sugar, Karo, water and salt.
- Boil to medium ball stage (240 degrees)over medium heat; stirring constantly.
- After bringing to medium ball stage, pour 1/3 of mixture over stiff egg whites in a large bowl; beating constantly.
- Cook remaining syrup to hard ball stage; check for stringing.
- Beat remaining syrup into egg white mixture until mixture holds shape.
- Add vanilla and pecans; beat 3-5 minutes longer or until not shiny.
- Drop on greased cookie sheet.

- FILLING:
- 1 cup all-purpose flour
- 1 teaspoon sugar
- 1/4 teaspoon salt
- 3 tablespoons canola oil
- 1 tablespoon butter, melted
- 2 to 3 tablespoons cold water
- 1 egg
- 1 egg white
- 1/2 cup packed brown sugar
- 1/4 cup sugar
- 1/2 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1/8 teaspoon each ground allspice, nutmeg and cloves
- 1 can (15 ounces) solid-pack pumpkin
- 1 cup fat-free evaporated milk
- Directions
- ●In a small bowl, combine the flour, sugar and salt. Using a fork, stir in oil and butter until dough is crumbly. Gradually add enough water until dough holds together.
- ●Roll out between sheets of plastic wrap into an 11-in. circle. Freeze for 10 minutes.
- ●Remove top sheet of plastic wrap; invert pastry into a 9-in. pie plate. Remove remaining plastic wrap. Trim and flute edges. Chill.
- ●Roll pastry scraps to 1/8-in. thickness. Cut with a 1-in. leaf-shaped cookie cutter. Place on an ungreased baking sheet.
- ●Bake at 375 degrees for 6-8 minutes or until edges are very lightly browned. Cool on a wire rack.
- ●In a large bowl, beat the egg, egg white, sugars, salt and spices until smooth. Beat in pumpkin. Gradually beat in milk.
- ●Pour into pastry shell. Bake at 375 degrees for 45-50 minutes or until a knife inserted near the center comes out clean. Cool on a wire rack. ●Garnish with leaf cutouts. ●Refrigerate leftovers.
ROASTED SWEET POTATO SPEARS WITH PINEAPPLE SALSA

- Potatoes:
- 2 medium sweet potatoes
- cooking oil spray
- salt
- cayenne pepper to taste, optional
- Salsa:
- 1 8 oz can unsweetened pineapple chunks with juice
- 1/2 c. red bell pepper, diced
- 1/2 c. onion, finely diced
- 2 t. flat Italian parsley, chopped
- 1 1/2 t. lemon juice
- Directions:
- ●Preheat oven to 375 F.
- ●Wash and dry potatoes. Cut each potato lengthwise into 8 wedges.
- ●Spray a baking sheet (one with sides) lightly with cooking oil spray. Arrange potato wedges in a single layer on the sheet and place in the center of the oven.
- ●Bake 15 minutes, turn wedges over and bake another 15 minutes or until fork tender and golden brown. While potatoes are baking prepare salsa.
- ●Pour pineapple chunks and juice into bowl. If the pineapple chunks are large, cut them in half. Stir in the red bell pepper, onion, parsley and lemon juice. Add a pinch of salt to taste. Chill.
- ●As soon as potato wedges are baked through, remove from oven and sprinkle lightly with salt and cayenne pepper, if desired. Transfer to platter and spoon salsa over wedges.
