CHOCOLATE GRAVY

●Serve over biscuits, shortbread or ice cream
- 1/3 c. sugar
- 1 1/2 T. all purpose flour
- 1 1/2 T. cocoa
- 1/2 c. milk
- 1/2 c. water
- 1/4 c. butter or margarine
- 1 t. vanilla
- ●Whisk together first 5 ingredients in a small saucepan. Bring to a boil over medium heat, stirring constantly. Boil until thickened and bubbly.
- ●Stir in butter and vanilla.

● Spoon remainder of butter over biscuits as soon as they come out of the oven
- 4 C. Pioneer or Bisquik Biscuit Mix
- 8 oz. sour cream
- 3/4 C. club soda
- ½ stick butter, melted
- ● Combine first 3 ingredients and mix.
- ● Turn lightly on floured waxed paper and pat out with hand (mixture is too sticky to use rolling pin). Place in greased pan.
- ● Spoon ½ of the melted butter over biscuits before baking.
- ● Bake @ 400F to desired brownness.
LOADED BAKED POTATO CASSEROLE

- Preparation:
- 1 (22-oz.) package frozen mashed potatoes
- 1 (6.5-oz.) container garlic-and-herb spreadable cheese
- 1/2 cup milk
- 4 cooked bacon slices, crumbled
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 cup (4 oz.) shredded Cheddar cheese
- Garnish: chopped fresh chives
- 1 . Prepare potatoes according to package directions.
- 2 . Stir in spreadable cheese and next 4 ingredients; stir until blended. Spread mixture on bottom of a lightly-greased 11- x 7-inch baking dish; top with Cheddar cheese.
- 3 . Bake at 350° for 25 to 30 minutes or until thoroughly heated. Garnish, if desired.
HERB CHEESE BUTTER

- Directions:
- 1/4 cup butter, softened
- 1 tablespoon grated Parmesan cheese
- 1 teaspoon chopped fresh parsley
- 1/4 cup dried oregano
- 1 pinch garlic powder
- salt and pepper to taste (optional)
- ● In a small bowl, stir together the butter, Parmesan cheese, parsley, oregano, garlic powder, salt and pepper.
- ● Refrigerate. Let stand at room temperature for 25 minutes before using.
- Note: This is a good herb butter, and will last about 4 days in the refrigerator/

- MERINGUE:
- 2 C. sugar, divided
- ½ C. all-purpose flour
- Pinch of salt
- 2 C. milk
- 5 egg yolks, lightly beaten
- 2 T. butter or margarine
- 1 tea. vanilla extract
- 1 baked 9-inch pastry shell
- Meringue
- ●Whisk together 1 cup sugar, flour, and next 3 ingredients in a heavy saucepan.
- ●Cook over medium heat, whisking constantly, until mixture is hot.
- ●Sprinkle remaining 1 cup sugar in a heavy skillet, and cook over medium heat, stirring constantly until sugar dissolves and turns a light golden brown.
- ●Gradually add dissolved sugar to hot custard mixture, stirring constantly. Cook, stirring constantly, until mixture thickens and boils.
- ●Spoon into pastry. Spread Meringue over hot filling, sealing to edge of pastry.
- ●Bake at 325 F. for 25 to 28 minutes.
- 4 to 6 egg whites
- ½ to 3/4 tea. cream of tartar
- ½ C. sugar
- ½ tea, vanilla extract
- ●Beat egg whites and cream of tartar at high speed with an electric mixer, just until foamy.
- ●Add sugar 1 tablespoon at a time, beating until stiff peaks form and sugar dissolves (2 to 4 minutes).
- ●Add vanilla, beating well.

- 3 3 3 (8 ounce) packages cream cheese
- 1 1 1 cup white sugar
- 5 5 5 eggs
- 1 1 1 teaspoon vanilla extract
- 8 8 8 ounces sour cream
- 1 1 1 cup white sugar
- 1 1 1 teaspoon vanilla extract
- Directions
- to 350 to 350 degrees F (175 degrees C). Line cupcake pans with paper cupcake liners.
- 1 to 2/3 to 3/4 together the cream cheese and 1 cup of sugar. Stir in the eggs one at a time, then mix in the vanilla. Spoon into cupcake pans to fill about 2/3 to 3/4 full.
- 30 5 to 10 in the preheated oven, until golden brown. Remove from the oven and cool for 5 to 10 minutes.
- 1 make the sour cream topping, whisk together the sour cream, 1 cup sugar, and vanilla until smooth. Spoon into the well on the top of each cupcake.

- Directions:
- 6 eggs, beaten
- 1 1/3 c. sugar
- pinch salt
- 1 c. light corn syrup
- 1 c. dark corn syrup
- 2/3 c. butter, melted
- 4 c. pecans, finely chopped
- 1 T. vanilla
- 2 deep dish pie shells, unbaked
- ●Preheat oven to 350 F.
- ●Combine all ingredients in a large bowl and mix well.
- ●Pour mixture evently into each pie shell.
- ●Bake for 45 minutes.
