Ingredients
- 1 1/4 lb beef chuck (in one piece)
- 1 c. pearl barley
- 1/2 lb cremini mushrooms, quartered
- 4 stalks of celery, quartered
- 6 medium carrots, quartered
- 2 md leeks sliced 9 white and light green parts only)
- 1 sprig thyme
- 4 c. beef broth
- 1 t. soy sauce
- salt and pepper
Preparation
Step 1
1) combine all except salt and pepper in slow cooker. add 1c. water, 1 tsp salt and 1/4 tsp pepper. cover and cook low 8 hrs
2) uncover, skim excess fat. transfer beef to cutting board and let cool slightly. slice or shred into bite sized pieces. thin the vegetable barley mix in cooker with some water if desired. also top with horseradish if desired
