Ingredients
- 2 lbs eggplant
- 1 t salt
- 1/8 t pepper
- 1 egg
- 1/2 C milk
- 1/4 C cornflakes
- 1/4 C cracker crumbs
- 1/4 C bread crumbs seasoned
- 1/4 C parm. cheese
- 1/8 C grated american cheese
Preparation
Step 1
peel eggplant and cut into 1/2" slices. mix egg, milk, salt and pepper into shallow dish. mix all dry ingredients in a second shallow dish. dip eggplant in egg then dry mix. bake on greased cookie sheet at 400 for 30-40 min.
