Ingredients
- Crust:
- 1 cup plus 2 tablespoons graham cracker crumbs
- 1 tablespoon sugar
- 2 teaspoon olive oil
- Filling:
- 1 tub (16 ounces) 1% fat cottage cheese
- 1 brick (8 ounce) 1/3-less fat cream cheese
- 1 large egg
- 1/3 cup sugar
- 2 teaspoon orange peel
- 1/2 cup drained, canned mandarin oranges, place on paper towel to dry
- 1/4 cup chopped walnuts
Preparation
Step 1
Heat oven to 350 degrees. Have ready a 9-inch glass pie plate.
*Crust:*
Mix ingredients in bowl or plastic bag. Press over bottom and up sides of pie plate.
Bake 10 minutes. Cool on wire rack (leave oven on).
*Filling:*
Process ingredients in food processor until well blended. Spread in cooled crust.
Bake 55 to 60 minutes or until pointed knife inserted in center comes out clean (top may crack, that's OK). Cool on wire rack; refrigerate at least 2 hours before serving.
*To Serve:* Place mandarin orange sections around edges of cake; sprinkle chopped walnuts in center.
