Brussel Sprout/orange salad

Ingredients

  • Dressing:
  • 2 c brussel sprouts cut in 1/2 lengthwise
  • 2 sm oranges peeled, quartered and sliced
  • 1/3 c dried cranberries
  • 1/2 c walnuts
  • 3 tbsp white wine vinegar
  • 1 tbsp grated orange rind
  • 1/4 c orange juice
  • 1/3 c virgin olive oil
  • 1/4 tsp ginger
  • pinch each allspice, cinnamon, cloves and nutmeg
  • 1/8 tsp salt and pepper

Preparation

Step 1

Blanch srouts: put in boiling water for 3-4 minutes then put in ice bath to stop cooking.

Combine sprouts, oranges, cranberries and walnuts.

Combine dressing ingredients and mix well. Pour over salad and toss.
