Ingredients
- Dressing:
- 2 c brussel sprouts cut in 1/2 lengthwise
- 2 sm oranges peeled, quartered and sliced
- 1/3 c dried cranberries
- 1/2 c walnuts
- 3 tbsp white wine vinegar
- 1 tbsp grated orange rind
- 1/4 c orange juice
- 1/3 c virgin olive oil
- 1/4 tsp ginger
- pinch each allspice, cinnamon, cloves and nutmeg
- 1/8 tsp salt and pepper
Preparation
Step 1
Blanch srouts: put in boiling water for 3-4 minutes then put in ice bath to stop cooking.
Combine sprouts, oranges, cranberries and walnuts.
Combine dressing ingredients and mix well. Pour over salad and toss.
