Pepperoni Tortellini Soup

Ingredients

  • 1 cup uncooked cheese tortellini
  • 1 clove garlic, minced
  • 2-14.5 oz chicken broth
  • 1-14.5 oz Rotel Tomatoes, undrained
  • 1 oz. (1/4 cup) pepperoni slices
  • 1 tsp basil
  • fresh grated parmesan

Preparation

Step 1

In large saucepan, combine broth, tortellini and garlic. Bring to a boil. Reduce heat; simmer 6-15 min or until tortellini is done. Stir in remaining ingredients (except Parmesan). Simmer for 5 minutes.

Top w/cheese before serving.
