Lentil Barley Soup

Ingredients

  • 2 tsp. canola oil
  • 1 c. sliced leek
  • 3 c. vegetable or chicken broth
  • 1 c. water
  • 3/4 c. beer
  • 1 c. chopped carrot
  • 1 c. chopped celery
  • 1/2 c. chopped parsnip
  • 1/4 c. fresh dill
  • 1/4 c. uncooked barley
  • salt
  • pepper
  • 1/4 tsp. thyme
  • 2 bay leaves
  • 1/2 c. dried lentils

Preparation

Step 1

1. Heat oil in a Dutch oven over medium high heat.2. Add leek & sauté 2 minutes.
2. Add broth, water & beer. Bring to a boil.
3. Add carrot through bay leaves. return to a boil.
4. Cover, reduce heat & simmer for 15 minutes.
5. Stir in lentils. Cover & cook 30 minutes.
6. Discard bay leaves.
7. Place 1 1/2 c. soup into blender or food processor. Puree.
8. Return mixture to pot.
9. Bring soup to a boil, cover, reduce heat & simmer for 10 minutes.
