Ingredients
- 1 1/2 cups black beans
- 1 cup diced onion
- 1 tbsp oil
- 1/2 tsp salt
- 1 pound butternut squash, chopped
- 6 cups water
- 6 oz beef
- 1 bay leaf
- 2 tsp dill
- 1 tbsp vinegar
Preparation
Step 1
1. Mix water, onion, oil, beans and bay leaf in pressure cooker. Place in beef shank and butternut squash.
2. Bring to full pressure and hold for 22 minutes. Allow for natural release of pressure (15 min +/-). Mix in dill and salt and simmer a few minutes. Add vinegar and taste and adjust seasonings.
