Ingredients
- 4 lg sweet potatoes
- 1/2 C caramel ice cream topping
- 2 T butter
- 1.5 C mini marshmallows
- Opt:1/2 C pecans
Preparation
Step 1
Scrub and pierce sweet potatoes, microwave until tender, turning once. Cut each potato in half lengthwise. Scoop out pulp, leaving thin shells. Mash pulp with the caramel and butter; spoon into shells. Place on baking sheets; sprinkle with marshmallows (and pecans if you want). Broil 3-4 inches from the heat for 2-3 minutes or until marshmallows are golden brown.
