Ingredients
- 3 lbs baking potatoes, peeled and cut into large chunks
- 1/2 cup heavy cream
- 1/2 cup milk
- 1/4 cup butter or margarine, cut into pieces and more for garnish
- 1 1/2 tsp salt
- 6 scallions, chopped
- 1/4 cup and 1 T chopped fresh parsley, divided
Preparation
Step 1
In large pot over high heat combine potatoes with enough water to cover. Bring to a boil, cook until tender 20-30 minutes. Drain, return potatoes to same pot.
With potato masher or mixer at medium speed beat in cream,milk, butter and salt until smooth and fluffy. Stir in scallions and ¼ cup parsley.
Serve sprinkled with remaining parsley and if desired more butter.
