Creamy Chicken and Asparagus

Ingredients

  • 2 chicken breasts, chopped
  • 3 strips of bacon, chopped
  • 2 T. coconut oil or butter
  • 3 shallots, minced
  • 2 cloves of garlic, minced
  • 1 bunch of asparagus, chopped
  • 1 can coconut milk
  • pinch of pepper
  • 1 T. cumin
  • 2 t. paprika

Preparation

Step 1

Heat oil (or butter) in a large pan. Saute shallots and garlic for about 2 minutes over medium high heat. Add chicken and bacon and season with pepper, cumin, and paprika. Cook until browned (about 8-10 minutes). Add asparagus and cook about 1 minute. Then add coconut milk and bring to a boil. Cook about 3 more minutes until sauce reduces and thickens.
