CARIBBEAN SHRIMP TOSS

Ingredients

  • 1 tablespoon vegetable oil
  • 2 tablespoons finely chopped fresh ginger
  • 2 limes
  • 2 garlic cloves, crushed
  • 1 tablespoon soy sauce
  • 1/2 teaspoon sugar
  • 1/2 teaspoon hot red pepper flakes
  • 1/4 cup finely chopped fresh coriander
  • 2 lbs large tail-on cooked shrimp (defrost if frozen)

Preparation

Step 1

Stir vegetable oil with ginger, juice of both limes, garlic, soy sauce, sugar and hot red pepper flakes.

Stir in coriander and shrimp.

Cover and refrigerate for at least 1 hour or up to a day.
Stir occasionally.
Place in a shallow bowl and serve with toothpicks.
