Ingredients
- 2 tablespoons olive oil (I used hot & spicy)
- 1 small onion, chopped
- 2 cloves garlic, chopped
- 1/4 cup white wine
- 1 cup drained diced canned tomatoes
- 1 teaspoon dried basil
- 1/2 cup sliced black olives (optional)
- 4 tilapia fillets
Preparation
Step 1
Heat oil in skillet on high heat.
Add onion and garlic.
Sauté for 2 minutes or until slightly softened.
Add wine, tomatoes and basil to skillet.
Bring to a boil for 1 minute then reduce heat and simmer for 5 minutes or until slightly thickened.
Place fish in a buttered dish that will hold it in a single layer.
Top with sauce and sprinkle with olives.
Bake at 375°F for 10 to 12 minutes; until fish is opaque and white juices start to rise.
Serve from baking dish.
