SZEHUAN PORK AND BROCCOLI

Ingredients

  • 1 pound lean pork (tenderloin or roast)
  • 6 - 8 green onions
  • 1 medium green or sweet red pepper
  • 1 1/2 cups fresh broccoli florets
  • 1 large onion
  • 2 garlic cloves, sliced
  • 1/4 tsp ground ginger
  • 1/4 tsp crushed red pepper flakes
  • 2 Tbsp hot water
  • 2 tsp sugar
  • 6 Tbsp ketchup
  • 4 Tbsp soya sauce
  • 3 Tbsp vegetable oil
  • 12 snow peas

Preparation

Step 1

Cut pork into 1x1/4 in. strips; set aside. Cut green onions, pepper, broccoli and onion into 1-in. pieces; set aside. Combine garlic, ginger, pepper flakes, water, sugar, ketchup, and soya sauce; set aside. In wok or large skillet, heat oil over high. Stir-fry pork until no longer pink; remove and keep warm. Add more oil if necessary; stir-fry all vegetables until crisp-tender. Add pork and sauce mixture; cook until thickened.
