pumpkin bites

Ingredients

  • For the cream cheese icing:
  • Pam
  • 1 c. flour
  • 3/4 c. sugar
  • 1 t. baking powder
  • 1 t. cinnamon
  • 1/2 t. allspice
  • 1/4 t. salt
  • 1 c. pumpkin puree
  • 1/2 c. oil
  • 2 eggs
  • 3 oz. cream cheese,softened
  • 2 c. powdered sugar
  • 1 t. vanilla
  • 1-2 T. milk or cream

Preparation

Step 1

1. Adjust an oven rack to be in the center of your oven. Turn the oven on to 350. Lightly grease the 9" square cake pan with oil

2. Put the flour, sugar, baking powder, cinnamon, allspice, and salt in a large mixing bowl. Stir with the wooden spoon. Add the pumpkin, oil, and eggs. With the electric mixer set on medium speed, beat until the mixture is well blended. Using the rubber spatula, scrape the mixture into the oiled pan and spread it evenly.

3. Place the pan in the preheated 350 oven. Bake the bars until a toothpick stuck into the center comes out clean (without uncooked batter on it), 18-25 minutes.

4. Put the cooling rack on your counter. Using the pot holders, remove the pan from the oven and put it on the rack Let cool.

5. To make the icing: Put the cream cheese, powdered sugar, vanilla, and 1 T. milk or cream in the medium mixing bowl. With the electric mixer set at medium speed, beat until the mixture is smooth and creamy. If necessary, add a little more milk or cream, just enough to make the icing spreadable.

6. Using the icing spatula, spread the icing over the top of the pumpkin bars. Using a sharp knife, cut into 9 squares. Then cut each square in half on the diagonal to make two triangles. Serve.
