Pumpkin Cupcakes

Ingredients

  • 1 yellow cake mix
  • 1 pkg. 4 serving size vanilla instant pudding
  • 1 c canned pumpkin
  • 1/2 c oil
  • 1/2 c water
  • 3 eggs
  • 11/2 t ground cinnamon
  • 1 t ground cloves
  • 1 t pure vanilla extract
  • Cream Cheese Frosting
  • 1 pkg cream cheese softened
  • 1/4 c butter softened
  • 1 t pure vanilla extract
  • 1/4 t ground cloves
  • 1 lb. confectioners sugar

Preparation

Step 1

Mix all ingredients on low speed until moistened. Beat on medium speed 2 minutes. Spoon batter into 24 paper linied muffin cups, fillinig each cup 2/3 full.

Bake at 350 20 minutes. Frost cooled cupcakes with cream cheese frosting when cooled.

Beat all ingredients for frosting until light and fluffy. Gradually beat in powdered sugar until smooth
