Chilled Squash Salad

Ingredients

  • 1 medium squash (zucchini, summer, or other), chopped
  • 1/2 red onion, halved and sliced
  • 1 cup cherry tomatoes
  • 1 T. fresh cilantro, chopped
  • 2 t. veggie bombay seasoning
  • pinch of salt and pepper
  • 1/8 cup crumbled feta cheese (optional)

Preparation

Step 1

Steam the squash and onions until softened. Place in a bowl and let cool. Add tomatoes, seasonings and cheese (if desired) and mix. Chill and serve.
