Pear and Parsnip Bisque

Ingredients

  • 4 tablespoons butter
  • 1 bunch scallions, sliced
  • 4 cups cubed parsnips
  • 1/4 cup white wine
  • 2 cups broth
  • 2 comice pears, chopped
  • 1/2 cup heavy cream
  • Salt and pepper

Preparation

Step 1

In large saucepan, melt butter. Add scallion whites and parsnips; cook 8 minutes. Add wine, broth and 1 1/2 cups water; bring to simmer. Reduce heat and cook 8 minutes; add pears and cook 10 minutes. Puree with cream; season and top with scallion greens.
