Sweet Potato Pudding (Mom's)

Ingredients

• 4 med sweet potatoes
• 1 beaten egg
• 1 can crushed pineapple drained
• 2 tsp salt
• Brown Sugar
• regular sugar
• Apricot jelly
• Marshmallow Fluff
• Marshmallows Mini
• Butter

Preparation

Step 1

Boil potatoes with skin on. Cool and peel. Mix in kitchen aid, potatoes, 1 beaten egg, pineapple, 2 tsp salt, add brown sugar, regular sugar, apricot jelly, marshmallow fluff, melted butter. Put it all in casserole and bake with mini marshmallows on top. If you are doubling potatoes, just add 1 more egg and a bit of everything except butter.
