Ingredients
- 3 eggs
- 3/4 c flour
- 2 tsp honey
- salt and pepper
- 4 cups orzo salad
- 12 slices bacon (optional)
Preparation
Step 1
In a medium bowl, whisk together eggs, flour and honey, season with salt and pepper. Fold in corn-orzo salad.
Heat a large nonstick skillet over medium high. If using, cook bacon in batches until crisp, 10-12 minutes. Reserve fat.
If not using bacon, heat 1-2 tsp oil in skillet. Drop orzo mix by 1/4 cupfuls into pan. Flatten each slightly and cook until golden, 2-3 minutes per side. Drain on paper towels. Serve with bacon.
