Quick Corn and Black Bean Soup

Ingredients

  • 1 box(10oz) Green Giant Niblets Frozen corn & butter sauce
  • 1 can (14oz) black beans, drained and rinsed
  • 1 can (14 1/2 oz) diced tomatoes, undrained
  • 1 can (14oz.) reduced-sodium chicken broth
  • 1/4 cup chopped green bell pepper
  • 2 tsp. chili powder
  • 1/2 tsp. cumin
  • 2 Tbsp chopped fresh cilantro, if desired

Preparation

Step 1

Microwave corn pouch, vent the pouch, for about 2 min. till slightly thawed. Remove from pouch and place corn in 2 quart pan. add remaining ingredients except cilantro. Cook over medium high heat for about 7 minutes or longer. I cooked it longer at lower temperature so flavors would marry. I also added leftover meat loaf. Add chicken or some leftover meat if you have it. Sprinkle cilantro on top of serving if desired.
