Ingredients
- 2 c. oatmeal
- 2 c. buttermilk
- 2 eggs, beaten
- 1 c. oil
- 1 c. brown sugar
- 1 1/2 c. chopped dates
- 2 c. flour
- 2 tsp. baking soda
- 3/4 tsp. salt
- 1 tsp. baking powder
Preparation
Step 1
Soak oatmeal in buttermilk for 1 hour, set aside.
Mix eggs, oil, brown sugar, and dates and add to oatmeal mixture.
Stir together flour, soda, salt, and baking powder and add to egg mixture just until moistened. Do not beat.
Fill into greased muffin pans. Bake at 375 degrees for about 18 minutes. Makes about 24 muffins.
