Mushrooms and Veggies

Ingredients

  • 2 T. olive oil
  • 5-6 choppd green onions
  • 2-3 cloves of garlic, minced
  • 2 cups mixed dried mushrooms
  • 1 cup chopped asparagas
  • 1/4 cup red wine or cooking sherry
  • 1/4 cup chicken broth
  • 1 cup cherry tomatoes, cut in half
  • 1 cup fresh spinach
  • salt and pepper
  • 2 t. Veggie Bombay seasoning

Preparation

Step 1

Saute onions and garlic in olive oil for about 1 minute. Then add mushrooms, asparagas, wine, and broth. Add seasonings Cook for about 8 minutes. Then add tomatoes and cook about 2 more minutes. Add spinach and cook just until it begins to wilt.
