Ingredients
- 2 T. olive oil
- 5-6 choppd green onions
- 2-3 cloves of garlic, minced
- 2 cups mixed dried mushrooms
- 1 cup chopped asparagas
- 1/4 cup red wine or cooking sherry
- 1/4 cup chicken broth
- 1 cup cherry tomatoes, cut in half
- 1 cup fresh spinach
- salt and pepper
- 2 t. Veggie Bombay seasoning
Preparation
Step 1
Saute onions and garlic in olive oil for about 1 minute. Then add mushrooms, asparagas, wine, and broth. Add seasonings Cook for about 8 minutes. Then add tomatoes and cook about 2 more minutes. Add spinach and cook just until it begins to wilt.
