Roasted chicken with herb rub and couscous

Ingredients

  • herb rub:
  • 3 lbs chicken
  • salt and pepper
  • 1 1/3 cups whole wheat couscous
  • 3 garlic cloves
  • 1 inch piece fresh ginger
  • 1 tbsp orange zest
  • 2 tbsp orange juice
  • 1 medium bunch cilantro
  • 1 tbsp olive oil

Preparation

Step 1

make rub:
in a food processor, combine chopped garlic and ginger, orange zest an d juice. Process until finely chopped. Add cilantro, stems removed, and olive oil. Process until finely chopped. Scrape down sides as needed.
Preheat oven to 450. Arrange chicken on a single layer on a rimmed baking sheet and coat with herb rub. Season with salt and pepper. Roast until cooked, 30 minutes.
Cook couscous according to package. Top cooked couscous with chicken and pan juices.
