Cauliflower and parsnip mash

Ingredients

  • 1 medium head of cauliflower, cut into small florets
  • 2 parsnips, peeled and cut into 3/4 inch pieces
  • 3 garlic cloves
  • 1/2 cup low sodium chicken broth
  • 1/2 cup fat free half and half
  • 1 tbsp. light stick butter
  • 1/2 tsp salt
  • 1/4 tsp ground nutmeg

Preparation

Step 1

Place cauliflower, parsnips, and garlic in large microwavable bowl. Pour broth around vegetables. Cover with plastic wrap, turning back one section to vent. Microwave on high until vegetables are very tender, 8-10 minutes. Cool 5 minutes. transfer vegetable mixture to food processor. Add half and half, butter, salt, nutmeg,and puree.
