Alan's Aunt Connie Foster’s Coconut Pie

Ingredients

  • Meringue:
  • 1 cup sugar
  • 2 cups milk
  • 1 cup coconut
  • 3 large egg yolks
  • 1/4 cup flour
  • 1 tsp vanilla
  • 1/2 stick oleo
  • 9-inch pie crust
  • 3 egg whites
  • 1/2 tsp vanilla
  • 1/4 tsp Cream of Tartar
  • 6 Tbsp sugar

Preparation

Step 1




Bake pie crust according to instructions.

Beat egg yolks. Combine flour and sugar; add to the egg yolks. Pour into milk; add oleo, coconut and vanilla. Cook over medium heat until thickened. Pour into baked pie crust



Beat egg whites with vanilla and cream of tartar until soft peaks form. Gradually add sugar, beating until stiff, all sugar is dissolved and glossy peaks form. Spread meringue over hot filling, sealing the edge of the crust. Bake at 350° for 12 to 15 minutes or until meringue is golden. Cool.
