Cilantro corn with chile-mint sauce

Ingredients

  • 4 med. ears of corn, shucked
  • 2 T olive oil + more for pan frying
  • 1 1/2 T ginger
  • 3 cloves minced garlic
  • 2 T cilantro leaves
  • Salt & pepper
  • 1 C packed mint leaves
  • 1 jalapeno, minced

Preparation

Step 1

Set aside cooked shucked corn.
In med skillet heat 2 T olive oil. Add ginger & garlic& cook over mod heat, stirring, til fragrant, @ 2 min. Stir in cilantro & corn. Season with salt & pepper. Serve.
