Crispy Bruschetta with Goat Cheese and Tomatoes

Ingredients

  • 12 1/2 " french bread
  • 3 Tablespoons olive oil
  • 1 large garlic clove
  • 6 plum tomatoes, chopped
  • 1 teaspoon lemon juice
  • 4 oz. soft fresh goat cheese
  • 3 Tablespoons chopped fresh mint

Preparation

Step 1

Preheat oven to 325 degrees, brush both sides of bread with olive oil and bake until golden. Rub garlic on both sides of toast.

Combine tomatoes, and lemon season with salt and pepper. Spread goat cheese on bread, Mound tomatoes on toast, baked until heat through (8 min). Sprinkle with mint.
