Chicken and Black Bean Chili

Ingredients

  • 2 tsp olive oil
  • 2 red bell peppers, chopped
  • 1 large onion, chopped
  • 3 garlic cloves, minced
  • 1 lb ground skinless chicken breast
  • 1 (28oz) can crushed tomatoes
  • 1 Tbsp chili powder
  • 2 tsp cumin
  • 1/8 tsp cayenne
  • 1 (15.5oz) can black beans, drained and rinsed

Preparation

Step 1

Heat oil in a large nonstick pot over medium heat. Add bell peppers, onion, and garlic; cook, stirring until onion is softened, about 5 minutes. Add chicken; cook, until no longer pink, about 7 min.

Add tomatoes, chili powder, cumin and cayenne to pot; bring to boil. REduce heat and simmer, stirring until mixture is slightly thickened, about 30 min. Stir in beans; simmer until heated through, about 3 min longer.
