Grilled Jamaican Style Halibut

Ingredients

  • 2 scallions, chopped
  • 2 jalapeno peppers, seeded and minced
  • 2 garlic cloves, halved
  • 2 Tbsp lime juice
  • 1 Tbsp soy sauce (gf)
  • 1 Tbsp brown sugar
  • 2 tsp olive oil
  • 2 tsp chopped fresh thyme
  • 1 tsp hot pepper sauce
  • 1/2 tsp allspice
  • 1/2 tsp cinnamon
  • 1/2 tsp black pepper
  • 1 (1 1/4 lb) halibut steak, cut into 4 equal pieces
  • lime wedges

Preparation

Step 1

To make marinade, combine all ingredients except halibut and lime wedges in blender and puree. Transfer to large zip loc bag; add fish. Seal bag and coat fish. REfrigerate, turning bag occasionally, at least 4 up to 8 hours. REmove fish from marinade; discard marinade.

Spray grill rack with nonstick spray. Preheat grill to medium high or prepare medium high fire using direct method.

Place halibut on grill rack and grill until just opaque in center, about 5 min per side. Serve with lime wedges.
