Ingredients

  • 6 Lbs, fully cooked ham bone in half ham
  • 3 Lbs potatoes
  • Salt
  • Tablespoons butter
  • 1 Cup chopped onions
  • 2 Tablespoons flour
  • 1/8 Teaspoon pepper
  • 2 1/2 cups of milk
  • Whole cloves
  • 2 Tablespoons brown sugar
  • 1 Tablespoon prepared Mustard
  • 1/8 Teaspoon Papriks

Preparation

Step 1

1. Preheat oven to 325. Wipe ham with a damp paper towel. With a sharp knife remove most of the skin from the ham. Place the ham fat side up on a rack in a shallow, open roasting pan. Bake uncovered for 1 1/2 hours. Meanwhile wash and peel the potatoes.

2. Size the potatoes 1/4 inch thick. Place sliced potatoes and 2 teaspoons of salt in a large saucepan, add boiling water just to cover. Cover and bring to a boil, boil gently about 5 minutes or until potato is just fork tender. Drain well in a small sauce pan, melt butter.

3. Add onions, saute until golden about 3 minutes. Remove from the heat. Stir in flour, 1 teaspoon salt and pepper until smooth. Gradually stir in the milk bring to a boil stirring constantly. Reduce heat and simmer about 3 minutes. Set sauce aside.

4. Remove ham from oven. Increase oven temperature to 375. To score make diagonal cuts in the fat not cutting meat 1/4 inch deep and 1 1/4 inches apart. Use ruler as a guide make diagonal; cuts. Insert cloves.

5. Combine brown sugar and mustard and mix well. Pat mixture on scored fat. Insert meat thermometer in center of ham, away from bone. Place ham in center of 3 qrt shallow baking dish or shallow casserole. Spoon half of the drained potatoes around the ham.

6. Stir the cream sauce, pour half over the potatoes. Repeat with remaining potato and sauce. Sprinkle with paprika. Bake uncovered 45 minutes or until the thermometer registers 138f. and the ham and potato glaze is bubbling
