Ingredients
- 1 cup quinoa, cooked
- 1 red onion, diced
- 1 cup corn kernels
- 1 red pepper, diced
- 2 cups of low-sodium black beans, rinsed and drained
- 1 whole avocado, cubed
- 1 lime, juiced
- 1/4 cup of salsa
Preparation
Step 1
In large mixing bowl, toss together all ingredients until well-combined. Serve warm or cold.
