SCALLOP CASSEROLE

Ingredients

  • 1 green pepper, chopped
  • 1 cup chopped onions (250 mL)
  • 1 (10-oz) can cream of celery soup
  • 1 red pepper, chopped
  • 1/2 cup mushrooms, sliced (250 mL)
  • 2 tbsps butter
  • 1 lb scallops
  • Grated cheese, optional

Preparation

Step 1

Saute peppers, onions and mushrooms in butter until crisp. Parboil the scallops. Put all ingredients along with soup in a large casserole dish. Sprinkle with grated cheese if desired. Bake for 40 minutes at 350 degrees F (180 C.). Serves 6.
