Couscous-Double Olive Couscous Pilaf

Ingredients

  • 2 tbls olive oil
  • 1 small red onion, chopped
  • 10 pitted Kalamata olives, about 1/4 c.
  • 10 pimento stuffed olives , halves, about 1/4 c.
  • 1 pkg. (5.8 oz.) roasted garlic and olive oil couscous mix, like Near East
  • 2 tbs. fresh chopped parsley
  • 10 cherry tomatoes, about 1/2 cup

Preparation

Step 1

In a pot, heat oil over medium heat. Add onion, cook stirring often, until softened, about 7 mins. Add olives, 1 1/4 c. water and couscous spice packet, bring to a boil.

Stir couscous and cover. Remove from heat. Let stand 5 mis. Fluff with fork, stir in parsley, and tomatoes. Transfer to serving bowl
