Vichy Carrots

Ingredients

  • 4 med. carrots
  • 1 bottle vichy (or evian) water
  • 3 T butter, cubed
  • 1 t. sugar
  • salt & pepper
  • 1 T. parsley

Preparation

Step 1

preheat oven to 400. slice carrots into 1/8" rnunds. spread carrots in pyrex baking dish in single layer. pour just enough vichy water to cover the carrots 1/3 deep. dot with butter and sprinkle with sugar and salt. baking dish over high heat on stove top till water comes to a boil. loosely cover with foil or parchment paper and slide them in the oven. bake 20 min till most of the water is evaporated
