Ingredients
- 2 T oil
- 1 minced onion
- salt (to taste @ end)
- 4 cloves minced garlic
- 1 T grated ginger
- 1 t garam masala
- 3 c water
- 1 1/4 c red lentils
- 1 can coconut milk
- 1/2 c minced fresh cilantro
- 12 oz tomato seeded and chopped medium
Preparation
Step 1
Cook onion in oil. Add garlic, ginger and masala - cook for 15 sec. Stir in water, lentils and coconut milk. Bring to a boil. Reduce to simmer and cook 20 -30 min until it is a thick puree. Stir in cilantro, tomato and salt.
