Pineapple Salsa Chicken

Ingredients

  • 6 boneless, skinless chicken breasts
  • 1 can pineapple chunks
  • 1/2 c finely chopped red bell pepper
  • 1/4 c finely chopped green bell pepper
  • 1 tsp. chopped green onion
  • 2 tsp. cilantro or parsley (chopped)
  • 2 tsp. jalepeno chilies (chopped)

Preparation

Step 1

Grill or broil chicken 5 minutes on each side or until no longer pink inside. Drain pineapple chunks (reserve 1/4 c juice). Combine pineapple,reserved juice, bell peppers, onion, cilantro and chilies to bowl. Serve salsa over chicken before serving.
