Stuffed Zucchini

  • 1/2 large zucchini per serving
  • Cherry or other tomatoes
  • Steamed brown rice
  • Olive oil
  • Pine nuts
  • Grated cheese of your choice
  • Seasoned bread crumbs

Preparation

Step 1

Slice each zucchini lengthwise and remove inner part, making a 'boat'. Mix steamed rice with pine nuts and stuff into zucchini. Slice tomatoes or cut cherry tomatoes in half and place tomatoes on top of rice, covering almost all of the rice. Cover with bread crumbs. Sprinkle with grated cheese. Grease a casserole dish liberally with olive oil and put about 1/8 inch of water in the bottom of the dish. Place the zucchini in a single layer in the casserole dish. Cover and bake at 350F until the zucchini is tender. Uncover and broil for about 5 minutes. Serve hot.
