Beef Stroganoff

Ingredients

  • 1 TBSP flour
  • 1/2 ts[ salt
  • 1 lb beef sirloin cut into 1/4 " strips
  • 2 TBSP butter
  • 1 c thinly sliced mushrooms
  • 1/2 c chopped mushrooms
  • 1 clove garlic, minced
  • 2 TBSP butter
  • 3 TBSP flour
  • 1 TBSP tomato paste
  • 1 1/4 c beef stock or can of condensed beef broth
  • 1 c sour cream

Preparation

Step 1

Combine flour and salt, dredge meat. Heat skillet, then add 2 T butter. When melted add sirloin strips and brown quickly. Brown all sides. Add mushroom slices, onion and garlic, cook 3 to 4 min. or until onion is barely tender.

Remove meat mixture from skillet. Add 2 T butter to pan drippings, when melted add 3 T flour. Add tomato paste.

Slowly add in beef stock, cook stirring constantly until mixture thickens. Return meat mixture to skillet. Stir in sour cream. Heat briefly.

Serve over egg noodles.
