Ingredients
- 1/3 cup butter softened
- 1/2 cup brown sugar splenda
- 2 eggs
- 1/3 cup buttermilk
- 1 tsp vanilla
- 2 1/2 cups flour
- 2 tsp baking powder
- 1 tsp baking soda
- 1/4 tsp salt
- 1/4 tsp ginger
- 2 cups pears peeled and diced
- 1/4 cup crystalized ginger finely chopped
Preparation
Step 1
in a large bowl beat brown sugar with butter until fluffy.beat in eggs 1 at a time.beat in buttermilk and vanilla.in a seperate bowl mix flour,baking powder,baking soda,salt and groung ginger.stir into egg mixture just until combined.fold in pears and crystallized ginger.spoon into muffin cups.bake at 375 until tops are firm to the touch about 25 minutes
