Three Citrus Marinade

Ingredients

  • 1/2 cup fresh lime juice
  • 1/2 cup fresh lemon juice
  • 1/2 cup fresh orange juice
  • 1/2 cup olive oil
  • 4 cloves garlic, minced
  • 2 teaspoons coarsly ground black pepper
  • 3 crushed bay leaves
  • 3 tablespoons fresh cilantro, chopped

Preparation

Step 1

Combine all ingredients in a mixing bowl and let stand at room temperature for 30 minutes.

Pour over poultry and let marinade 2 to 3 hours. The marinade can be brushed on firm fish steaks, scallops or shrimp (do not let seafood sit in marinade or the citrus juices will "cook" it.)
